
From Dundee in Scotland we welcome Holy Goat Brewing. These guys love experimenting with mixed fermentation and wood-aged beers. At Holy Goat Brewing, they don’t believe in average beers. Their creations are like a circus performance on your taste buds. Think combining traditional techniques with a pinch of innovation, like a magician conjuring a rabbit out of a hat – but with beer! Hail the goat!
Who are these guys?
Holy Goat are Johnny (who also founded Vault City), James and Graham. The guys have taken an unconventional approach to yeast and fermentation. They’re using Brettanomyces yeast for long maturation times (typically 3-4 months) to produce unique, complex, full-flavoured sour beer. By mixing old and new techniques their aim is to produce complex, interesting and tasty beers. We think they succeeded in doing so! You really should give them a try on Just in Baxfest (unless you’re affraid of course 😉).
